Tropical Traditions Gold Label Virgin Coconut Oil Review

If you have been keeping up with my blog and family, then you know that we have been trying really hard to eat healthy. Well one of my families favorite meals is fried chicken. Well as we all know fried chicken doesn’t usually equate to healthy eating.

So when I was given a jar of Tropical Traditions Gold Label Virgin Coconut Oil I immediately got online to see what all this oil can be used for. I have been cooking with olive oil for years now,but I had no idea what to use this oil for.

Well boy was I surprised! There seem to be a million different uses for Coconut Oil including

-using as a frying oil

-making mayonnaise (recipe)

-to make dressings

-as a hair conditioner

-in all your favorite baked recipes.

So after seeing all the great ways to use it I decided to try it as a frying oil. I love the fact that it stays stable even at high heat and doesn’t smoke like other oils I have cooked with.

So here is my families favorite fried chicken recipe

Sweet Tea Chicken Tenders

3 lb chicken tenders

1 gallon really sweet tea

2 eggs

2 cups panko bread crumbs

2tbsp garlic salt

4 tbsp Parmesan cheese

1 quart Tropical Traditions Gold Label Virgin Coconut Oil

To start with rinse all tenders off with water and marinate in the sweet tea for approx. 8 hours(I marinate mine for 24 hours or overnight)

After tenders are marinated drain off all excess tea.

Mix the 2 eggs together in a bowl for the egg wash. In another bowl mix together the panko, parmesan cheese, and the garlic salt.

Dip each tender in the egg wash and then dip them in the bread crumb mixture.

I fry all things in my cast iron skillet, but in fry skillet will work.

Heat up the Coconut Oil in the skillet and fry 5 tenders at a time for four minutes on each side.

Then strain off all excess oil by putting tenders on a plate with paper towels.

Serve with your favorite sides and dips or just eat by themselves.

Here is my chicken frying in the coconut oil. Another plus to cooking with Coconut Oil is that it smells so good while you are cooking.Plus it doesn’t leave that smoky smell in the air that takes forever to clear out.

Here is the photo of the finished product. These tenders are so good!! The marinade of sweet tea keeps the chicken super moist with just a slight hint of sweetness. My kids and hubby LOVE this dish and I hope your family will to.

Disclaimer: I was given one quart of oil for review purposes.Doing a review is always my choice and all opinions stated are mine and mine alone. This is also my own recipe I made up hope you enjoy.
