As Winter arrives here in Central Texas, so does cold and flu season. Luckily now that we have older kids the cold and flu bugs seem to hit our house less than when our children were smaller. Yet we do have three grand-kids who do occasionally bring the sniffles our way.
We have all heard that a great home cooked chicken soup is the cure for a cold or flu,but at our house we do things a bit different. When someone comes down with a bug we make sure we have our Kleenex on hand from Target ,and Mom makes sure she has all the ingredients for a good homemade chicken and dumplings.
So this weekend when my daughter was laid up in bed with a nasty cold I headed out to Target to load up on Kleenex with this great coupon offer going on right now.

So let me show you guys how we do chicken and dumplings at our house. First gather all the necessary ingredients
*1lb boneless chicken breast
*32oz chicken broth
*1 small yellow onion diced
*3 celery stalks diced
*4 carrots peeled and diced
3 cups water
*1 tbsp minced garlic
*4 tbsp salted butter
*1-2 can small biscuits
*salt and pepper to taste
In a large pot saute the carrots,onions,celery,garlic and butter for about 10 minutes over medium heat.Or until all veggies have started to soften. I also add my salt and pepper at this point.
Let this simmer on the stove at a little less than medium heat for about 20–30 minutes.The longer you let it simmer, the better it taste.
You then add all the small pieces of biscuits a few at a time.I add them slowly while stirring the whole time to keep them from sticking together.Let it simmer for another 20 minutes stirring frequently to make sure all the dumplings get done.
Not only does a meal cooked with love help someone feel better when they are down with a yucky bug, it also helps them feel loved. Ashlyn ate two bowls of Mom’s chicken and dumplings and got up this morning and headed to school with no trouble.
It warms my heart to know that with Kleenex and a bowl of chicken and dumplings dealing with a cold or flu this Holiday Season is made more bearable.
